Chef Sanjay Thakur teaches all about modern plate presentation to hospitality students
Chef Sanjay Thakur, In-flight Chef, Etihad Airlines, showcased his gastronomic delights with Sous Vide cooking and Modern Plate Presentation. Chef Sanjay is an enthusiastic Chef, who has travelled extensively and represented India at the World Chef Olympiad Bucouse d’Or.
He told the students that artfully presented food really does taste better. Techniques and ingredients are only half of the story, and how you present them on the plate can often be the difference between a classic dish and one that simply comes and goes.
At Chitkara School of Hospitality, he demonstrated dishes like Tandoori Chicken, Beet, Olives, Red Snipper, Spinach Orange, Lamb Rogan Josh, Carrot, Asparagus, Dark Chocolate, Red Wine Mousse.
The students besides Sous Vide cooking, learnt the skills of Foaming, Chocolate and Carrot Air. They also learnt to make orange and apple Granita besides various Gels.
He further added that making your food look good is just as, if not more, important than making it taste good. As a matter of fact, it would appear as though a significant part of the latter relies on the former.
